Ingredients
- 2 tablespoons butter
- 1/2 tablespoon olive oil
- 1 yellow onion , diced
- 1 large carrot , thinly sliced
- pinch of salt
- 2 cups diced or shredded cooked turkey
- 3 russet potatoes , peeled and cut into 1-inch cubes
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 1 can (14.75-ounces) cream style sweet corn
- 1 can (15.25-ounces) sweet corn, rinsed
- 2 cups low sodium chicken broth
- 3 cups 2% milk
- chopped fresh parsley , for garnish
Instructions
- Heat butter and olive oil in a large soup pan over medium-high heat.
- Add the onion, carrot slices, and a pinch of salt, then cook for 3 minutes, and stir until cooked.
- Stir in turkey and potatoes, then season with salt, pepper and thyme.
- Add corn cream, sweet corn, chicken broth and milk.
- Bring to a boil using high heat.
- Less heat becomes low and cover the pan, simmer for 20 minutes then stir until well blended.
- Remove from the heat, let stand for several minutes, garnish with parsley.
- Serve on the table.
