Instant Pot Honey Chicken Shriracha

Ingredients
- 4 chicken breasts (boneless / skinless)
- 1/2 cup of ketchup
- 1/4 cup Sriracha Sauce
- 1/4 cup honey
- 2 tablespoons of soy sauce use low sodium if you wish
- 1/2 cup water
- 3 tbsp cornstarch + 1/4 cup cold water to thicken sauce
- For Serving:
- Cooked rice
- Scallions chopped, to taste
Instructions
- Enter the chicken breast in an instant pot, then in a bowl, shake honey, sriracha, sauce, soy sauce and water until smooth.
- Then pour the chicken using the sauce.
- Cover and adjust the valve, then cook under high pressure for 10 minutes.
- After the countdown is complete, release the pressure quickly, this will ensure the chicken is cooked properly.
- Remove the chicken and place it in the container.
- Press the saute button on the Instant pot, then in a small bowl or measuring cup, then mix in corn flour + 1/4 cup cold water, then add to the instant pot and simmer for a few minutes until the sauce thickens slightly.
- Meanwhile, cut the chicken into small pieces.
- Put it back in the instant pot when the sauce is thick, then serve it on the rice with leeks.
