Delicious Kung Pao Chicken Recipe

Kung Pao Chicken is a stir-fried chicken from China that has a combination of sweet, spicy and salty flavors. This is a very pleasant oriental dish.

I think this is one of the very addictive Chinese dishes, using crispy pieces of chicken, very tasty then swimming in a delicate and delicious Chinese sauce, this is a recipe for kung pao chicken that is hard to miss, traditionally this chicken dish is dry stir which uses a lot of sauce.

But, the combination of spicy and refreshing taste makes this dish a champion. The key to this dish is Kung Pao Sauce, but before switching to kung pao sauce, prepare the chicken first, first starting by marinating the chicken pieces in a mixture of corn flour, baking soda, and Chinese wine.

Then you can quickly fry it with hot oil before finishing it in stir-fry with other ingredients, then seasoning corn flour, soybeans, grapes, so that it gives an extraordinary taste to the chicken.

After preparing the chicken, start preparing the kung pao sauce, the right time to prepare the sauce is when your chicken is marinated, start preparing everything before you start the very important stir, and the sauce is a very important part.

Don't forget to use Sichuan Pepper, this is the key to this dish, although it has an extreme spicy taste, just use a little.

Ingredients
Chicken:

  • 800 grams of boneless / skinless chicken breast
  • 1 tbsp shaoxing wine or dry sherry
  • 1 tbsp light soy sauce
  • 2 tsp baking soda
  • 1 tsp cornstarch / corn flour
Sauce:
  • 1/2 cup low-sodium chicken stock or broth
  • 5 tbsp light soy sauce
  • 2 tbsp Chinese black vinegar
  • 2 tbsp Chinese Shaoxing wine
  • 2 tsp dark soy sauce
  • 2 tsp hoisin sauce
  • 2 tbsp sugar
  • 1 tsp cornstarch / corn flour
Stir Fry:
  • 4 tbsp cooking oil divided
  • 1 1/2 tbsp garlic (4-6 cloves)
  • 1 tbsp ginger
  • 1/2 red bell pepper (capsicum) seeded and diced
  • 1/2 green bell pepper (capsicum) seeded and diced
  • 8-10 dried chilies cut into ½-inch pieces (adjust to taste)
  • 1 tbsp Sichuan peppercorns lightly toasted and ground
  • 4 green onion / scallion cut into 1 inch
  • 1/2 cup roasted / unsalted peanuts
  • 2 optional sesame oil tbsp

Instructions

  1. Mix all chicken ingredients in a shallow bowl, cover and soak for 10 minutes.
  2. Shake the sauce ingredients together until the sugar has dissolved, then set aside.
  3. Heat a frying pan over high heat.
  4. Add 2 tablespoons of cooking oil, then add marinated chicken.
  5. Fry for 3-4 minutes until browned.
  6. Add the remaining cooking oil to the pan, stir the garlic, sliced ??chili, ginger, and sichuan pepper, stir-fry for 1 minute.
  7. Give the sauce that has been prepared, pour into the pan and boil when stirring.
  8. If it has thickened, add the chicken back to the pan, mix all the ingredients with the sauce until chicken coated perfectly.
  9. Stir in the green onions, beans and sesame oil, stir well for 2 minutes.
  10. Serve on white rice.
