Ingredients
- 1 4-5 pounds 2-3 kg whole chicken
- 1/4 cup unsalted butter, melted
- 3 tablespoons of olive oil
- 1/4 cup of white wine
- 1 lemon, halved
- Salt and freshly ground pepper, to taste
- 2 tablespoons of fresh chopped parsley
- 4 garlic cloves, minced
- 1 head of garlic
- 3 fresh whole rosemary sprigs
Instructions
- Preheat the oven to 430 degrees F.
- Cover the tray with tinfoil, or coat a small baking pan.
- Neck from the cavity, get rid of excess fat and remaining hair.
- Pour olive oil, wine, melted butter, and lemon juice over the chicken. Under the skin and inside the cavity, season the chicken freely outside and inside the cavity with salt and pepper, sprinkle over the parsley.
- Rub the chopped garlic over the chicken, mix all ingredients on top of the chicken.
- Enter the garlic into the chicken cavity with the squeezed rosemary and lemon, tie the legs together with a rope.
- Place the chicken breast on a baking sheet, bake for 1 hour and 15-20 minutes, spread until the juice is clear.
- Grease again, and bake for 2-3 minutes until golden.
- Remove from the oven, cover with aluminum foil, let stand for 10 minutes, serve and drizzle with the remaining lemon juice.
